LACTOSE FREE COCONUT ICE DESERT!

Just found the most amazing lactose free desert made with coconut ice!!!! I saw it on an episode of Food for Thought with Claire Thomas.

It's so simple.



All you do is take some coconut water....it must be the WATER, not the milk and pour it into ice cube trays. Next freeze. When well frozen, put coconut ice cubes into blender and blend until they are pieces (like the size of rock candy, not tiny granules like a slush).

Pour these frozen coconut chunks into pretty parfait glasses.

Next make a syrup. She used a strawberry syrup which is equally easy to make. I made this syrup entirely by accident last week when I was trying to make strawberry jam. Basically you add fresh strawberries to a pot, add some water (a little) and some sugar (white or organic). Then boil this mixture down, stirring CONSTANTLY so it doesn't burn. Next, take off the burner and strain out any pieces of the remaining strawberries. What you're left with is an AMAZING syrup.

The best part is, you can make this as sweet as you want or as tart as you want. You don't have to follow any specific recipe!!! You can also do this with other flavors!

PRETZELS!

If you're looking for a great lactose free snack, pretzels may be an option for you! They're low fat, USUALLY lactose free and taste great! Beware of any pretzels that are ranch flavored, butter flavored or cheese flavored as these could all potentially contain lactose. Enjoy!
