PEACH TART!

RECIPE:

Pastry:

1 stick plus 2 tablespoons Flesichman's unsalted margarine
2 cups pastry flour
1 tablespoon sugar
1/4 teaspoon salt
4-6 tablespoons water

Filling:

3/4 cup sliced almonds
1/2 stick Fleischman's unsalted margarine, softened
1/4 cup sugar
1 egg yolk
1/4 teaspoon almond extract

4 peaches
3 tablespoons Flesichman's unsalted margarine
1/4 cup sugar

For pastry, mix together flour, sugar and salt. Add butter and water to make into a dough. Chill in refrigerator. For filling, blend all ingredients until very smooth. Set aside. Meanwhile, take dough out of refrigerator and roll out to roughly 1/8". Cut out 8 round disks roughly 5" across. Preheat oven to 375F. Halve peaches, remove pits and slice very thin. Put 1 1/2 tablespoons in center of each dough disk, then put sliced peaches on top. (Leave an edge around pastry of about 1/4") Put a tiny amount of butter on each one and sprinkle with sugar. Bake for 25-35 minutes. Enjoy!

Please note: this pastry recipe is VERY buttery so please use it only for special occasions! Be careful also because Flesichman's margarine is hydrogenated.
