LACTOSE FREE LANCE CRACKERS!

If you're looking for a great snack to pack in your children's lunches, look no further. Made with whole grains, these are a great option!
 
INGREDIENTS: enriched flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), peanuts, whole wheat flour, vegetable oil (contains one or more of the following: canola oil, corn oil, palm oil, soybean oil), whole grain oats, dextrose, sugar, maltodextrin, wheat bran, malted barley flour, wheat gluten, corn starch, leavening (sodium bicarbonate, ammonium bicarbonate, monocalcium phosphate), salt, caramel color, soy lecithin.
 
It says on the label it "may contain milk" but I've never had any problems with it.

LACTOSE FREE LEMON BARS!

This recipe is for lactose free lemon bars. It's great for gatherings and parties. With Easter coming up, it's a perfect dessert!


RECIPE:

lactose free pie crust
1 pkg. lemon flavor Jello instant pudding
1 1/2 cups Lactaid lactose free milk

Put pie crust into cookie sheet. Poke holes into crust and bake according to recipe. Take out of oven and cool down. Meanwhile, prepare instant pudding mix with milk. When pie crust is COOL, pour pudding mixture over. Refrigerate until pudding is firm. Cut into bars and garnish with confectioner's sugar.

Please note: the pudding can make the pie crust soggy if not eaten the first day.

LACTOSE FREE STIR FRY!


1-2 chicken breasts, cut into strips
1 red bell pepper, sliced
2-3 carrots, sliced diagonally
2-3 stalks celery, sliced diagonally
2-3 slices onion, sliced
8-10 white mushrooms, sliced
parsley for garnish

Rice or noodles to serve it over.

Rinse chicken and cut into strips. Season with onion salt, salt and pepper, then saute over medium heat until done. Add sliced red pepper, carrots, celery, onion and mushrooms. Add any additional vegetables you may like. Meanwhile on the side, boil water for rice or noodles and cook. When stir fry vegetables are done, take off heat and add lactose free stir fry sauce. Stir to coat. You can also add the sauce while the vegetables are cooking (toward the end). Enjoy!

CHEERIOS KRISPIE TREATS!

This recipe uses Cheerios instead of Rice Krispies in Rice Krispie treats. Enjoy!




RECIPE:

3 tablespoons LACTOSE FREE margarine (I use Fleischman's light margarine for this)
1 package (10 oz., about 40 regular) marshmallows OR 4 cups miniature marshmallows
6 cups Cheerios cereal

In a large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Cheerios and stir until well coated. Using buttered spatula or wax paper, evenly press mixture into 13" x 9" x 2" pan coated with cooking spray. Cool. Cut into 2 inch squares.
