PEACH TART!

RECIPE:

Pastry:

1 stick plus 2 tablespoons Flesichman's unsalted margarine
2 cups pastry flour
1 tablespoon sugar
1/4 teaspoon salt
4-6 tablespoons water

Filling:

3/4 cup sliced almonds
1/2 stick Fleischman's unsalted margarine, softened
1/4 cup sugar
1 egg yolk
1/4 teaspoon almond extract

4 peaches
3 tablespoons Flesichman's unsalted margarine
1/4 cup sugar

For pastry, mix together flour, sugar and salt. Add butter and water to make into a dough. Chill in refrigerator. For filling, blend all ingredients until very smooth. Set aside. Meanwhile, take dough out of refrigerator and roll out to roughly 1/8". Cut out 8 round disks roughly 5" across. Preheat oven to 375F. Halve peaches, remove pits and slice very thin. Put 1 1/2 tablespoons in center of each dough disk, then put sliced peaches on top. (Leave an edge around pastry of about 1/4") Put a tiny amount of butter on each one and sprinkle with sugar. Bake for 25-35 minutes. Enjoy!

Please note: this pastry recipe is VERY buttery so please use it only for special occasions! Be careful also because Flesichman's margarine is hydrogenated.

LACTOSE FREE TORTILLA CHIPS!

If you're looking for a snack that dosen't contain any milk products, try Tostitos tortilla chips (PLAIN VARIETY!) Make sure to read the labels because some tortilla chips do have milk products in them. This is a great option! (The exact name is Tostitos Crispy Rounds Tortilla Chips.)

If you go to Subway and you need to find a great sandwich that's lactose free, try the Veggie Patty sub! Or it may be called the Veggie Burger sub (depending on where you live!) It's amazing!

LACTOSE FREE OYSTER CRACKERS!

I've found some fantastic lactose free oyster crackers from a companycalled Westminster Bakers Co. (www.westminsterbakers.com). They're called "soup and snack crackers."


INGREDIENTS: Unbleached wheat flour, water, canola oil, cane sugar, salt, yeast, baking soda.

This company also makes other kinds of lactose free crackers, but be careful, because some have cheese in them.

TECHNICAL ISSUES

Hey guys...I still am having trouble uploading photos to my blog. I will still continue writing though. One thing I did discover this weekend was not to heat up almond milk! LOL! I tried to make two recipes that required heating up almond milk almost to a boiling point. Needless to say, it turned out tasting like burnt almonds! I think almond milk is best used in cold recipes, or maybe for baked cookies and cakes. Baking it is okay...boiling it is not!

JELLY BELLY JELLY BEANS!

Did you know that Jelly Belly jelly beans are lactose free? They are! Each ingredient list is different, so be sure to check them. For example, the cherry flavor will have different ingredients than the buttered popcorn flavor.

Also, all Jelly Belly jelly beans are certified OU Kosher by the Orthodox Union. Enjoy!

LACTOSE FREE YOGURT!

I've never actually tried this yogurt, but I saw it in the grocery store and it looked amazing! How refreshing to know that someone actually makes lactose free yogurt! I've tried other products from So Delicious and they've been amazing, so this one is probably great too!

MANISCHEWITZ FOOD!

A great kosher food brand to use is Manischewitz. They have some great kosher food products...almost all of which are lactose free. (As always, however, check the labels to make sure!) They make crackers, matzo ball soup, grape juice, etc. They can be found at most grocery stores across the country. You can find them online at www.manischewitz.com.



KOSHER FOOD!

If you're lactose intolerant, you might be pleased to know that you can eat many kosher foods. You don't have to be Jewish to enjoy kosher foods. According to Jewish food law, meat and milk must be kept separate. That means many packaged kosher foods will be dairy free. Just try looking in the international or kosher food section next time you're in the grocery store and see what I mean. Just read the ingredient lists!

You can also take advantage of many kosher recipes which typically leave milk and milk products out of foods!
