LACTOSE FREE MATZO BALL SOUP!

After a day of snow tubing, skiing or whatever other winter sport you like, this matzo ball soup is the perfect ending to a cold day!

INGREDIENTS: matzo meal (Passover wheat flour and water), sugar, salt, monosodium glutamate, onion, vegetable shortening (partially hydrogenating cottonseed oil), garlic, monocalcium phosphate, sodium bicarbonate, pepper, dill, celery seed, parsley, annatto color.

KEDEM TEA BISCUITS!

If you're looking for an AMAZING lactose free cookie, I've found the perfect one for you! Honestly, of all the lactose free cookies out there, this one is my favorite! It has a very mild flavor. You can put in the edge of a bowl of ice cream, serve it with some fresh fruit or even make a ice cream sandwich out of two!


This is a kosher cookie, so it may be hard to find for some people. They do have a website www.kedem.com. They're redesigning the site so it's not up just yet, but when it's up, you can call them and see if they're available in your area! Happy snacking!

LACTOSE FREE ICE CREAM!

I hope everyone had a nice Christmas! In preparation for all those New Year's Eve parties, I found you another fantastic lactose free soy ice cream from So Delicious!

 
INGREDIENTS: non-dairy frozen dessert: organic soymilk (filtered water, organic soybeans), organic brown rice syrup and/or organic tapioca syrup, organic dehydrated cane juice, organic soybean oil and/or organic safflower oil, chicory root extract, natural flavors, carob bean gum, tapioca sugar, guar gum, carrageenan, sea salt, organic pecans.

MUSHROOM OMELETTE!

No, you don't have to skip breakfast just because you're lactose intolerant!
 
 
 
RECIPE: 
 
2 egss
1/4 cup chopped mushrooms
salt
pepper
olive oil
 
Saute mushrooms in thin layer of olive oil on bottom of pan. Meanwhile, add eggs, salt and pepper to a bowl and stir. When mushrooms are soft, pour egg mixture into pan. Cook for 2-4 minutes until eggs are done. Fold omelette in half and serve! May also garnish with parsley!
 


APPLE TARTS!


Tarts don't always have to have milk products in them. This is a great lactose free option!
 



RECIPE:

1/4 lb. puff pastry
2 granny smith apples
1 teaspoon sugar
1/4 cup apple jelly

Roll puff pastry into two 8" squares roughly 1/4" to 1/8" thic. Cut a 3/4" strip off each side. Brush the edge of the squares with the water and "paste" the strips along each side of the square. Chill.

Thinly slice apples and place on chilled squares after you poke the bottom of the pastry with a fork. Sprinkle the tarts with sugar and bake at 400F for 15-20 min. Gently melt apply jelly and brush it on top of the squares. Enjoy!


 
 



POTATO LATKES!

In honor of Hanukkah, I have to share with you a great recipe for potato latkes! Happy Hanakkah to all of our Jewish friends!


RECIPE:

2 cups peeled and shredded potatoes
1 tablespoon grated onion
3 eggs, beaten
2 tablespoons white flour
1 ½ teaspoons salt
½ cup oil (canola)


Squeeze potatoes in towel to remove any excess water. In a bowl, stir together potatoes, onion, eggs, flour and salt. Fry over medium-high heat until done! Make sure they’re crispy!

BROCCOLI WITH PASTA!


This is a great lactose free dinner option for you!

RECIPE:

1 lb. box of pasta (any variety)
3-4 heads of broccoli (washed, cut up)
garlic (fresh)
salt
pepper
olive oil

Boil pasta. Set aside. Saute broccoli and garlic in olive oil (thinly coated on bottom of pan) until slightly firm. Add salt and pepper. Mix in with pasta. Enjoy!

GARLIC BREAD!

If you're looking for lactose free garlic bread, I have a great recipe for you!


RECIPE:

1-2 loaves French bread, sliced horizontally
4 tablespoons Fleischman's unsalted margarine or olive oil
garlic salt, garlic powder or garlic cloves
salt
pepper

Take your French bread and spread either the lactose free margarine or oil on top, then either sprinkle garlic salt or rub fresh garlic cloves on it. Sprinkle with salt and pepper. Bake in 400F oven for about 15-20 min. or until golden brown. MAKE SURE YOU WATCH the bread very closely as it can burn easily!

LACTOSE FREE SOUP!

If you're looking for lactose free canned soup for the cold winter months, then look no further. I've found three.

INGREDIENTS: chicken broth, carrots, cooked white chicken meat, egg noodle (wheat flour, semolina wheat, egg), celery. Contains less than 2% of: water, modified food starch, salt, chicken fat, corn protein (hydrolyzed), egg white, potassium chloride, carrot puree, soy protein isolate, onion powder, sugar, maltodextrin, sodium phosphate, yeast extract, garlic powder, chives, parsley, natural flavor, spice, egg yolk, beta carotene (color).

 

INGREDIENTS: chicken broth, tomato puree (water, tomato paste), carrots, celery, peas, corn, green beans, potatoes, rotini pasta (wheat flour, semolina wheat, egg white), carrot puree. Contains less than 1% of: tomatoes, salt, modified food starch, corn protein (hydrolyzed), potassium chloride, red bell peppers, sugar, onion, yeast extract, spice, natural flavor, parsley, citric acid, calcium chloride, egg yolk.

INGREDIENTS: water, beef broth, cooked beef, carrots, barley, peas, tomato paste, tomatoes, celery, potatoes, corn. LACTOSE FREE COOKIES!

This is a great recipe for lactose free cookies!

RECIPE:

6 eggs, separated
1 1/2 cups sugar
1 cup candied citron
3/4 cup chopped, blanched almonds
2 cups all-purpose flour, divided

Beat egg yolks until thick and lemon colored, then gradually add sugar, beating well. Dredge citron and almonds in 1/2 cup flour. Stir into yolk mixture.

Combine egg whites (at room temperature) and remaining 1 1/2 cups flour, beating until thick. Stir in yolk mixture.

Spoon batter into a greased 15x10x1 inch pan. Bake at 450F for 10 minutes. Remove from oven and cut into bars. Turn each bar on its side and return to oven for 4 to 5 minutes. Cool. Makes about 4 dozen cookies.

ROAST, POTATOES AND GREEN BEANS!

If you're looking for a lactose free dinner, this is a great option!





RECIPE:

1 beef roast (use what cut you like such as top round roast, beef brisket, etc)
small bag of green beans (about 4 servings, or 30 beans, washed)
4 large potatoes, washed

Rinse roast and put in shallow baking dish. Season with salt, pepper, garlic salt and onion salt. You may also use chopped or minced onion. Bake at 375F for 2-3 hours (depending on the roast). Make sure you flip it once.

Bake potatoes also at 375F for about one hour. In a medium saucepan, boil green beans until just slightly firm.

Serve and enjoy!

As you can see here, you can enjoy traditional dishes that don't require any dairy products at all. You can also substitute chicken here or a different kind of vegetable!

SKEWERED SESAME SHRIMP!

 
 

RECIPE:

24 large shrimp, peeled and deveined
8 6-inch bamboo skewers
2 tbsps. reduced-sodium soy sauce
2 tbsps. white wine vinegar
1/3 cup sesame seeds
1 tbsp. vegetable oil

Thread shrimp onto bamboo skewers (3 each). Combine soy sauce and vinegar in a shallow dish and put sesame seeds on a plate. Dip each skewer of shrimp into the soy sauce and vinegar mixture, then dip both sides of the shrimp skewer in the sesame seeds.

Heat oil over medium-high heat in a large skillet. Add shrimp skewers, 3-4 at a time and cook about 2 minutes per side or until shrimp are opaque. Transfer skewers to a plate. Pour the remaining soy-vinegar mixture into the hot pan and cook, stirring, until slightly thickened, about 30 seconds. Drizzle sauce over shrimp and serve warm.

FRENCH TOAST!

 

RECIPE:

2 slices lactose free bread (such as white Italian)
Fleischman's unsalted margarine
2 eggs
Sugar/cinnamon mixture
Canola oil (for frying)

Butter both sides of bread, then dip in egg. Dip in sugar/cinnamon mixture. To make the sugar/cinnamon mixture, add equal parts sugar and cinnamon to a bowl and mix. Of course, you can add more or less sugar depending on what you like. Fry on both sides in pan lightly coated with canola oil. You don't want a lot of oil in the pan here, just enough to coat the bottom of the pan. Enjoy! Like I said before, just because you're lactose intolerant, it dosen't mean you have to give up your favorite things. This is a great way to enjoy a typical breakfast that would normally be off limits.

GINGERBREAD HOUSE!

If you're looking for a lactose free gingerbread house, I have some great options!

There are some companies that make lactose free gingerbread houses that you can assemble yourself. Make sure to check the package and read the label to make sure they're lactose free. You an also try my gingerbread cookie recipe in a previous post on November 2nd. (I've never tried that recipe however for a gingerbread house, so I'm not sure if they'll be strong enough for the walls). If you do try that one, you can bake it on a flat sheet and then cut out the walls and roof. Then cut out the doors and windows. Another option is to use lactose free graham crackers. (Nabisco Honey Maid graham crackers are lactose free and will work for this).

For the frosting, make sure it's lactose free. You can use a buttercream made with Crisco or with lactose free margarine. Either way, just make absolutely sure it's lactose free.

Be sure to use only lactose free candies on the outside (obviously!) You can use gum drops, licorice, hard candies, dusting sugar, jelllied fruit slices such as wintergreen leaves or orange slices, etc.

RASPBERRY HARD CANDY

Again, you're usually safe with any kind of hard candy as it's just sugar, water and flavorings. However, these raspberry candies are really special at Christmastime.

Before you buy ANY candy, even if it's listed on here, always check the labels! Companies have been known to change ingredients, redesign products and update flavors without the public always knowing! If in doubt, call the company, ask for customer service and ask if there are any allergens in their products. Usually they will be happy to help you! Have a great Christmas!

PARTY PUNCH!

This is a great recipe for a punch that you can serve at your holiday parties!



RECIPE:

4 cups cranberry juice
3 cups seltzer water
2 limes, juiced
1/2 cup thawed frozen raspberries
crushed ice for serving

Combine cranberry juice, soda water and lime juice in a punch bowl. Add whole raspberries.
Fill glasses with ice. Top with punch, stir and serve!
